One of my favorite desserts I’ve baked thus far, raspberry swirl cheesecakes with oreo crusts…I literally drooled while I was eating one! The pizza store I work at got a new raspberry cheesecake, and I wanted to show them that I could make a better one then that machine processed crap :P

There are a lot of little components, but I had these whipped up in no time. I baked off the crusts for a few minutes, added the cheesecake mixture, dotted it with raspberry puree (swirling it in was a lot of fun!) and garnished the finished cupcakes with a fresh raspberry! All of them did collapse a little bit, any ideas why that happened? :/ but I definitely recommend this delicious dessert!
